Hey guys! I know that I haven’t rolled out a recipe post in a while. So, I figured that I would share what I made for lunch on Tuesday (I think lol).This recipe is VEGAN and delicious! Not only is it good for you, it is quick and easy to make as well! I got the inspiration for this recipe from a video by TheChicNatural on YouTube. I changed up some things and added a twist! I LOVEE this meal! It is nutritious and filling. Simple and tasty!
Ingredients:
1/2 cup of Sun dried tomatoes with herbs
1 bunch of spinach
1/2 cup of mushrooms
1 can unsweetened coconut cream
2 tbs of minced garlic
4-6 Tbs olive oil
1 box of penne pasta
1 ts cornstarch (optional)
Salt (to taste)
Pepper (to taste)
4 dashes of cayenne pepper
1 tsp onion powder
1 tsp paprika

Directions:
Cook pasta as directed
.In a 5 qt frying pan, add olive oil and heat on medium heat. Add in sun dried tomatoes and garlic. Saute for 5 mins.Add in mushrooms. Saute for an additional 2 minuets.
Add seasoning.
Add in 1 can of coconut cream and cornstarch. Whisk until blended evenly. Add more cornstarch to thicken to desired consistency.
Add in spinach. Cook and stir until spinach is wilted.
Drain pasta and add to the pan.Stir, serve and enjoy!
